Ramadhan Day 3 : Nasi Goreng Jagung Simple


 



Salam Ramadhan...

Nasi goreng, menu paling ringkas untuk sahur terutamanya kalau ada nasi sejuk baki dari semalam.  Kali ini saya buat nasi goreng jagung versi paling simple, tanpa menggunakan ayam atau seafood sebagai perasa. Ha..memang betul-betul simple lah tu kan? Hehe..

Nasi goreng jagung ni saya buat bersama lauk sampingan, iaitu ayam masak black pepper berkuah (saya dah kongsi dalam post sebelum ini).  Sebab tu lah kita masak ringkas-ringkas sahaja, tak perlu lauk bagai dalam nasi goreng sebab kita akan makan dengan lauk ayam black pepper.

Nasi goreng jagung ni kalau nak lagi sedap bolehlah pakai jagung fresh yang ada batangnya tu.  Tapi disebabkan saya pun tak plan awal-awal nak masak apa, kebetulan yang ada cuma jagung frozen, saya pakai sahajalah apa yang ada.  Nasi goreng jagung ini saya buat versi ala-ala nasi goreng Cina, ianya tak pedas, warna putih dan menggunakan lada sulah.  Kalau nak lebih sedap, tambahkan sedikit kicap cair dan minyak bijan, lagi umph rasanya nanti.  Tapi disebabkan stok kicap cair dan minyak bijan pun saya tiada di rumah, maka terpaksalah menggunakan apa sahaja bahan yang ada.  

Kadang-kadang nak beli sos itu dan ini, lepas tu jarang guna, terperap je dalam peti sejuk sampailah expired, kan membazir tu.  Lebih-lebih lagi kos barang dapur sangat-sangat mahal, jadi kita beli bahan yang kita selalu guna sahaja.  Makanan ni kita yang buat dia, so, asalkan pandai adjust rasa makanan sesimple apa pun akan menjadi sedap. Hehe.

Biasanya kalau saya buat nasi goreng berlauk macam ni saya takkan letak telur, tapi disebabkan nak upload di Youtube, saya letak juga telur, so kalau nak makan nasi goreng jagung ni begitu sahaja tanpa lauk pun dah sedap, tapi kena makan panas-panaslah sebab ada telur, kalau dah sejuk rasanya akan kurang sedap.



Nasi Goreng Jagung Simple






Kategori : Nasi

Masa Penyediaan : 5 minit

Masa Memasak : 10 minit

Jumlah Hidangan : 3-4 orang



Bahan-bahan :


3-4 sudu besar minyak masak

2 biji telur

3-4 ulas bawang putih (cincang)

1/4 batang lobak merah (potong dadu)

1/3 cawan jagung kernel (boleh pakai frozen/dalam tin/ jagung segar)

1 kiub pati ayam/serbuk perasa pilihan

3 cawan nasi sejuk

Cili padi ketuk

Hirisan cili merah

1 sudu besar sos tiram

1 sudu besar kicap sotong

2 sudu teh serbuk lada sulah

Garam secukupnya

Hirisan daun bawang



Cara Penyediaan :


  1. Panaskan minyak dalam kuali.
  2. Setelah minyak panas, pecahkan 2 biji telur, biarkan mengeras sebentar kemudian hancurkan.
  3. Tolak telur ke tepi dan masukkan bawang putih, tumis sehingga harum dan sedikit keperangan.
  4. Masukkan lobak merah, jagung kernel dan kiub pati ayam.  Masak sehingga kiub hancur dan sayuran lembut.
  5. Masukkan nasi sejuk yang telah digembur, cili padi ketuk, hirisan cili merah, sos tiram dan kicap sotong.  Gaul sebati dan masak seketika.
  6. Masukkan serbuk lada sulah dan letak garam secukupnya.  Gaul sebati kemudian taburkan hirisan daun bawang.  Gaul sebati.
  7. Nasi goreng siap dihidangkan.

Fajita Rice Simple




Nasi Fajita, atau Fajita rice merupakan salah satu menu yang popular yang berasal dari Mexico ini.  Fajita rice menggunakan rempah Fajita dan biasanya menggunakan ayam dan lada benggala sebagai rencahnya.  Cara memasaknya sangat mudah, caranya lebih kurang seperti memasak nasi goreng.

Rempah Fajitanya readymade boleh dibeli di pasaraya.  Tetapi untuk resepi ini, saya menggunakan campuran rempah yang ada di rumah saya untuk mendapatkan rasa yang hampir sama dengan rempah Fajita readymade ni.

Ayam yang digunakan untuk membuat Fajita rice ini ialah ayam bahagian isi ya, atau dada ayam.  Sebenarnya ada dua cara untuk memotong ayam, pertama, kita gunakan dada ayam yang telah dibuang kulitnya tanpa perlu dipotong.  Kedua, dada ayam yang telah dibuang kulitnya dihiris memanjang (strips) seperti filet ya.  Saya memotong dada ayam memanjang menjadi seperti filet ayam supaya mudah, tidak perlu dipotong lagi setelah ayam dimasak.

Fajita rice ini tidak terlalu pedas, dan biasanya menggunakan tiga jenis lada benggala, jadi warnanya memang menarik.  Kalau anda mahukan sedikit pedas, boleh sahaja ditambah dengan cayenne pepper atau pun cili padi.  Kita olah sahaja mengikut citarasa kita asalkan rasanya sedap.

Fajita rice ini sangat sesuai dijadikan menu untuk makan malam kerana mudah dan cepat untuk disediakan.  Seperti yang saya sebutkan tadi, fajita rice ini tidak terlalu pedas, jadi memang sesuai untuk dinikmati bersama anak-anak.  Fajita rice paling sedap dinikmati sebaik sahaja ia dimasak.

Masa Penyediaan : 10 minit

Masa Perapan : 30 minit

Saiz Hidangan : 5-6 orang



BAHAN-BAHAN :



Bahan Perapan Ayam :


520 gm isi ayam potong memanjang (filet) | dari 3 keping dada ayam saiz medium

1/2 sudu besar serbuk bawang putih

2 sudu teh serbuk cili

1 sudu teh serbuk jintan putih

2 sudu teh serbuk paprika

1 sudu teh oregano/mixed herbs

1-2 ke 1 sudu teh serbuk lada hitam kasar

1/2 sudu teh garam

1 sudu besar kicap manis

1 sudu besar jus limau/ lemon atau cuka makan



Bahan Lain :


4 sudu besar minyak masak

4 ulas bawang putih (cincang halus)

1 & 1/2 biji bawang besar (hiris nipis)

1/2 biji lada benggala hijau (potong memanjang)

1/2 biji lada benggala merah (potong memanjang)

1/2 lada benggala kuning (potong memanjang)

2 sudu besar sos cili

1 ketul kiub pati ayam

650 gm nasi putih (sejuk) | 4 cawan

Garam secukupnya



CARA MEMBUAT :


  1. Di dalam sebuah bekas, campurkan filet ayam bersama kesemua bahan perapan.  Gaul sebati, tutup bekas dan perap sekurang-kurangnya 30 minit. (Jika perap 30 minit, biarkan sahaja pada suhu bilik, jika lebih dari 30 minit, perap di dalam peti sejuk).
  2. Di dalam kuali, panaskan minyak masak.
  3. Goreng perapan ayam sehingga bertukar warna.
  4. Masukkan kiub pati ayam dan goreng sehingga sedikit kecoklatan dan kuahnya kering.
  5. Tolak filet ayam ketepi dan masukkan bawang putih cincang dan bawang besar yang dihiris nipis.  Tumis sehingga bawang layu dan harum.
  6. Masukkan hirisan lada benggala dan tumis selama 1 ke 2 minit, sehingga lada benggala sedikit lembut.
  7. Masukkan sos cili dan gaul sebati.
  8. Masukkan nasi dan gaul rata. Goreng beberapa minit supaya sebati.
  9. Perasakan dengan garam, gaul sebati dan padamkan api.
  10. Nasi Fajita sedia untuk dihidangkan bersama taburan daun bawang dan limau.

Nasi Ayam Panggang Madu




Nasi ayam merupakan salah satu menu yang sangat popular terutamanya di Malaysia, Thailand dan Singapura.  Menu yang diinspirasi dari nasi ayam Hainan, salah satu menu yang berasal dari China selatan, kini menu nasi ayam telah diperlbagaikan untuk mencipta variasi untuk memenuhi citarasa para peminat nasi ayam.

Resepi nasi ayam yang saya akan kongsikan kali ini saya adaptasi dari nasi ayam Hainan, yang menggunakan beras wangi untuk mendapatkan tekstur nasi yang lembut dan lebih harum, cuma ada sedikit perbezaan dari cara pembuatannya.  Tidak seperti kebiasaannya, saya tidak menggunakan lemak ayam untuk memasak nasinya.  Tetapi rasanya tetap enak dan cukup rasa.




Untuk ayamnya pula diperap dengan bahan perapan yang terdiri dari pes halia bawang putih, sos tiram, kicap dan lada hitam sebelum dioles dengan madu sebelum dipanggang.  Kulitnya garing sementara dalamnya lembut, berjus dan cukup rasa.

Nasi Ayam Panggang Madu

BAHAN-BAHAN




Stok Ayam :


3500 ml air | 14 cawan
3.5 ketul kiub pati ayam (saya pakai Knorr)
8-10 tangkai daun bawang bahagian putihnya
2 inci halia (hiris nipis)
5-6 ketul peha ayam penuh dengan kulitnya (whole leg)



Pes Halia Bawang Putih :


90 gm halia (6 inci)
30 gm bawang putih (4-5 ketul)
3/4 cawan stok ayam
1/4 cawan minyak jagung/minyak masak untuk menumis



Perapan Ayam :


Peha ayam penuh yang direbus
 3 sudu besar pes halia bawang putih
3 sudu besar kicap manis
2 sudu besar sos tiram
2 sudu besar kicap cair
1/2 sudu besar minyak bijan
Sedikit garam
Serbuk lada hitam secukupnya



Olesan Madu :


2 sudu besar madu
1 sudu besar minyak zaitun/minyak masak



Nasi Ayam :


3 cawan beras wangi
3 & 1/3 cawan stok ayam
3-4 sudu besar pes halia bawang putih
3/4 sudu besar garam atau secukupnya
Sedikit pewarna kuning (optional)
1 sudu besar penuh mentega/marjerin
2 helai daun pandan (simpul)
Minyak bijan secukupnya



Sos Cili :


8 tangkai cili merah
Jus dari 4 biji limau kasturi
3/4 cawan stok ayam
1 sudu teh penuh pes halia bawang putih
Garam secukupnya
Gula secukupnya



Sos Kicap :


Baki perapan ayam
1 cawan stok ayam
1-2 sudu besar kicap manis
Air bancuhan tepung jagung (campur 2 sudu teh tepung jagung dengan sedikit stok ayam)



Sup :


Baki stok ayam
1 beg sup bunjut
1/4 batang lobak putih (hiris nipis)
Serbuk lada hitam secukupnya
Baki pes halia bawang putih
Garam secukupnya



Hidangan Sampingan :


Hirisan timun
Hirisan tomato
Salad
Hirisan daun sup & daun bawang
Bawang goreng





CARA MEMBUAT




Stok Ayam :


  1. Didihkan air di dalam periuk.
  2. Masukkan kiub pati ayam, hirisan halia, ketulan ayam dan daun bawang.
  3. Reneh dengan api sederhana rendah selama 20 minit.
  4. Selepas 20 minit, keluarkan ayam.
  5. Buang lapisan lemak/minyak yang ada pada permukaan stok.















Pes Halia Bawang Putih :


  1. Kisar halus halia, bawang putih bersama stok ayam.
  2. Panaskan minyak di dalam kuali dan tumis pes halia bawang putih sehingga garing dan pecah minyak.















Perapan Ayam :


  1. Gaulkan ayam bersama kicap manis, kicap cair, pes halia bawang putih, sos tiram, minyak bijan, sedikti garam dan serbuk lada hitam secukupnya.
  2. Tutup mangkuk dan perap sekurang-kurangnya 30 minit pada suhu ruang, atau sehingga semalaman dalam peti sejuk.





Nasi Ayam :


  1. Masukkan beras wangi yang telah dicuci bersih dan ditoskan ke dalam periuk nasi.
  2. Masukkan stok ayam, garam, sedikit pewarna kuning jika suka dan pes halia bawang putih.  Kacau sebati menggunakan senduk/spatula sehingga tiada pes yang berketul.
  3. Masukkan daun pandan yang disimpul dan marjerin/mentega.
  4. Masak nasi seperti biasa.
  5. Setelah nasi masak, tutup suis dan diamkan nasi seketika, dalam 5-10 minit.  Buka penutup periuk nasi dan gemburkan nasi dengan perlahan supaya nasi tidak patah.  
  6. Titiskan sedikit minyak bijan, gemburkan lagi nasi supaya minyak meresap ke dalam nasi dan tutup semula penutup periuk nasi sehingga siap untuk dihidangkan.
















Ayam Panggang Madu :


  1. Panaskan ketuhar pada suhu 210℃ (dengan kipas) atau 220℃ (tanpa kipas).
  2. Spray loyang pemanggang atau redai keluli tahan karat (stainless steel) yang dialas dengan loyang pembakar di bawahnya dengan cooking spray atau oles dengan minyak supaya tidak melekat.
  3. Susunkan ayam yang telah diperap di atas loyang pemanggang/ redai tadi (bahagian berkulit di atas ya).
  4. Untuk olesan madu, campur bersama madu dengan minyak zaitun/minyak masak.
  5. Oles merata campuran madu pada permukaan ayam.
  6. Panggang selama 20 minit, api atas bawah.
  7. Selepas 20 minit, keluarkan dari ketuhar dan terbalikkan ayam.
  8. Oles permukaan ayam dengan campuran madu.
  9. Panggang semula selama 15-20 minit atau sehingga jus yang keluar dari ayam berwarna jernih.
  10. Terbalikkan ayam sekali lagi (bahagian berkulit di atas ya), oles lagi dengan campuran madu.
  11. Panggang sebentar dalam 5 minit pada rak atas untuk garingkan kulit ayam.















Sos Cili :


  1. Kisar bersama cili merah yang telah dipotong pendek (kalau tak mahu pedas, belah dua cili secara memanjang kemudian buang bijinya) dengan jus limau kasturi dan stok ayam.
  2. Tuang ke dalam periuk, campurkan pes halia bawang putih dan perasakan dengan gula dan garam secukupnya.
  3. Masak dengan api sederhana sehingga mendidih.















Sos Kicap :


  1. Masukkan baki perapan ayam, stok ayam dan kicap manis ke dalam periuk.
  2. Reneh dengan api sederhana sehingga mendidih.
  3. Tambah air bancuhan tepung jagung, kacau sebentar kemudian padamkan api.















Sup :


  1. Panaskan semula baki stok ayam, masukkan sup bunjut, hirisan lobak putih, baki pes halia bawang putih dan serbuk lada hitam secukupnya.
  2. Reneh sehingga mendidih dan lobak lembut.
  3. Perasakan dengan garam dan kacau sebati.  Padamkan api.
















Cara Menghidang Nasi Ayam Panggang Madu :


  1. Tekapkan semangkuk nasi ayam di dalam pinggan.  Hias dengan hirisan timun dan tomato dan salad. Letakkan seketul ayam di atas salad.
  2.   Sendukkan sup ke dalam mangkuk kecil, taburkan hirisan daun sup dan daun bawang dan bawang goreng.  
  3. Sudukan sos cili dan sos kicap dalam bekas kecil.
  4. Siap untuk dihidangkan.

Nasi Ala 3 Budak Gemuk Yang Viral





As an introvert who rarely keep myself updated on what's trending on the social media, I have to admit that I didn't aware of this menu, known as Nasi Ala 3 Budak Gemuk which has becomes viral among Malaysian.

It was not until I found videos on the making of this Nasi 3 Budak Gemuk popped up in my YouTube Homepage and from that moment I realized that I should try making it too.

It is it's Ayam Masak Kicap ,or Chicken Cooked In Soy Sauce, along with the spicy sambal belacan that make this menu special.

The Ayam Masak Kicap is different from the regular ayam masak kicap.

It has curry leaves and meat curry powder added into it.

While the sambal belacan uses both red bird's eye chilies and green bird's eye chilies, fried with garlic until fragrant and then pound coarsely with roasted shrimp paste (belacan), lime juice, sugar and salt.

The sambal belacan is then fried again for a while, to make it more delicious and a little bit oily.


Actually, we haven't tried the original version of Nasi Ala 3 Budak Gemuk before, so I referred to a few blogs to make the recipe, with some modifications to suit my preference.

Since it was my first time making it, I'm quite nervous of the outcome of the recipe.

Luckily, my whole family liked it very much!






Usually Nasi Ala 3 Budak Gemuk is served with ulam such as sliced cucumber, salad, long beans, King's salad (ulam Raja), winged bean (kacang botol) to make the dish more appetizing.

We enjoyed our Nasi Ala 3 Budak Gemuk with sliced cucumber and salad.


If love to enjoy dishes like Nasi Kak Wok, Nasi Kerabu and Nasi Lemak, this one is a worth to try recipe.


So, here it is, my version of  Nasi Ala 3 Budak Gemuk recipe.







Nasi Ala 3 Budak Gemuk 




Category : Nasi

Preparation Time : 20 minutes

Cooking Time : 1 hour

Serving Size : 5 to 6 people





AYAM MASAK KICAP  | CHICKEN COOKED IN SOY SAUCE




Ingredients:



1/2 chicken (cut into smaller pieces)

2 teaspoon of turmeric powder

Salt as needed

1 onion

2 shallots

4 cloves of garlic

2 inch of ginger

3 stalks of curry leaves

1 bag of soup spices (sup bunjut)

2 tablespoons of dried chili paste

2 tablespoons of meat curry powder

1 tablespoon of coconut paste (kerisik) - optional

1/4 cup of tamarind juice (mix 1/2 tablespoon of tamarind paste with 1/4 cup of water)

8 tablespoons of sweet soy sauce

2 tablespoons of oyster sauce

About 1/2 cup of water (adjust accordingly)

Cooking oil as needed

Salt to taste




Instructions:



Marinade chicken pieces with turmeric powder and salt for 5 minutes.





Heat a lot of cooking oil in a pan.  Once hot, deep dry chicken pieces until brown on all sides.  Do not overcrowd the pan to ensure chicken is evenly cooked and fry over medium heat.  





Once done, place fried chicken pieces in a strainer/colander to drain excess oil.  Set aside while we prepare the spices.



Blend finely onion, shallots, garlic and ginger with some water.




Using the same pan, remove some of the oil and leave about 1/4 cup of oil in the pan.  Heat the oil.  Once hot, Add in curry leaves and fry for a while, until fragrant.  Then, add in dried chili paste.  Stir for a while.




Add in blended spices and fry until oil separates (pecah minyak).  Stir frequently to prevent the bottom part from forming crust.




Then, add in oyster sauce, meat curry powder and soup spices.  Stir well.




Add sweet soy sauce (adjust to your liking), tamarind juice and some water.  Stir well and allow to simmer.




Then, add in fried chicken pieces, mix the spices evenly and allow to simmer until the gravy is thickened.  Season with salt if needed.

Ready to be served!








SAMBAL BELACAN PEDAS  | SPICY MALAYSIAN CHILI PASTE




Ingredients:



8 red bird's eye chilies

8 green bird's eye chilies

3 cloves of garlic

1 inch of roasted shrimp paste (belacan dibakar)

2 tablespoons of lime juice (jus limau kasturi)

Salt to taste

Sugar to taste

About 3 tablespoons of cooking oil





Instructions:




Coarsely cut the bird's eye chilies and garlic into small chunks.




Heat oil in a pan.  Once hot, fry bird's eye chilies and garlic chunks until fragrant and light brown.




Remove from pan and put in a mortar.




Coarsely pound fried ingredients together with roasted shrimp paste, lime juice, salt and sugar.




Then, heat the oil (use same oil for frying garlic and chilies), once hot, fry the sambal for a few seconds, just to coat it with oil to make it more fragrant.

Ready to be served!








ASSEMBLING NASI ALA 3 BUDAK GEMUK:



Place a sheet of food wrapper on a plate with the smooth part on top.  Place 1 or 2 scoops of hot rice in the middle.  Then, place 2 to 3 pieces of ayam masak kicap and a teaspoon of spicy sambal belacan at the side.  Decorate with sliced cucumber and salad.

Resepi Nasi Minyak Simple Tanpa Minyak Sapi & Susu Cair






If you're craving for nasi minyak yet you don't have ghee and evaporated milk available in your kitchen, this is the recipe that you're looking for!

Made with simple ingredients which are available in most of our kitchen, we can make yummy nasi minyak in less than 1 hour!

What's more, this nasi minyak is made with normal rice, so everyone can make nasi minyak even without using Basmathi rice!


You might be curious, is this nasi minyak is going to be delicious?

With no ghee and evaporated milk, the must-have ingredients for making nasi minyak?

Absolutely!  

In fact, my whole family prefer this version of nasi minyak since the taste is light with the fragrant aroma of the spices and margarine added into it.

Oh! Don't forget the pandan leaves!

We need those rosy, sweet aroma of the leaves to make more flavorful nasi minyak.

You may want to add some chicken stock powder or use chicken broth, instead of plain water to cook the nasi minyak.





Actually, it has been a while since I cooked nasi minyak.

The last time I was cooking nasi tomato, which is a different variation of nasi minyak was during early of Ramadhan this year, for our Iftar.

But it looks like Mr Hubby prefer this version of nasi minyak compared to nasi tomato, and he finished the nasi minyak up to the last grain of rice!


We're not picky when it comes to the side dish for our nasi minyak.

You can choose to enjoy your nasi minyak with curry, dhal, kuzi, korma or roasted meat or kebab, but we like to eat nasi minyak with ayam masak merah the most!

If you have extra time, you can also prepare another side dish for nasi minyak, which is called as acar.

Acar is a vegetable pickle which has sweet, spicy and sour taste all together.

We have a few versions of acar like acar rampai (this is my favorite!), fruit acar and simple acar made with pineapples, cucumber, red chilies, sugar, salt and vinegar.

Acar especially the simple acar has to be freshly made before it is served.

So, if you plan to make simple acar to be eaten with nasi minyak, mix the veggies with the vinegar, sugar and salt in a small portion at a time, just enough to be eaten at that time because the acar will no longer be fresh and it'll becomes watery as the juices from the pineapple and cucumber squeeze out after the acar is left for a few hours.


I didn't prepare acar for our nasi minyak since I ran out of pineapple and cucumber stock at home.

So we just enjoyed our nasi minyak with ayam masak merah and salads.


Even now, I'm still drooling to eat nasi minyak again as I'm writing this post at 3.30 AM while accompanying My Hubby which is on a night shift duty.

If you have raisins or cashew nuts at your home, you can add into your nasi minyak to add more flavors and textures to it.

I seldom stock cashew nuts, so don't expect to find the trace of the nuts in my nasi minyak recipe, unless, when I properly plan to cook nasi minyak, then I will definitely buy cashew nuts to be added into it.

INGREDIENTS






3 cups of rice - wash cleanly

4  & 1/2 cups of water (adjust accordingly to your type of rice)

2 pandan leaves - knotted

1 cube of chicken stock powder (optional)

2 star anises

1 small cinnamon stick

4 cloves

4 cardamoms

1/4 cup of raisins

1 tablespoon of margarine

2 tablespoons of corn oil (can use cooking oil to substitute)

Yellow food coloring 

Salt to taste

1 or 1 & 1/2 onion*

2 shallots*

3 cloves of garlic*

1 cm of ginger*

Water as needed for blending spices




Side Dish:


Ayam masak merah

Salad

Sliced cucumber

Sliced tomato

Acar

Fried shallots

Chopped green onion

Chopped Chinese celery




INSTRUCTIONS:




Blend ingredients written in bold and marked with * water as needed until smooth.




Heat 1 tablespoon of margarine with 2 tablespoons of corn/cooking oil in a wok. Once hot, add in cloves, cardamoms, cinnamon stick and star anises for a few seconds until fragrant.




















Add in blended spices and fry until oil separates (pecah minyak).  Then, add in chicken stock powder (if using) and mix until it dissolved.  Turn off the heat.




















Add cleanly washed rice into a rice cooker, water, pandan leaves, raisins, salt and the cooked spices.  Mix well with a spatula or a wooden spoon and cook rice as usual according to your rice cooker instructions.


Once the rice is cooked, turn off the rice cooker and let it sit (with lid closed) for 3 minutes.













After three minutes, open the lid and make small holes with a bamboo skewer or a chopstick down to the bottom of the rice cooker.





















Drop a small amount of yellow food coloring into the prepared holes.  Then, mix the rice gently with a fork while fluffing the rice at the same time.


Nasi minyak is now ready to be served!








How To Serve Nasi Minyak:



Put about a small bowl of nasi minyak on a plate.  Add a piece of ayam masak merah and spoon some of masak merah gravy on all over the chicken piece.  Spoon one or two tablespoons of acar or arrange a few leaves of salad, a few slices of cucumber and/or a few slices of tomato at the side of the plate.  


Lastly, sprinkle with fried shallots and chopped Chinese celery and green onion.

Nasi Ayam Hainan | Hainanese Chicken Rice Recipe





I have no word to describe how much I adore this dish ever since I was a child.
It is simply heavenly yummy!

While chicken rice, or nasi ayam is so common and popular here in my place, however, Hainanese chicken rice is more familiar among Chinese since the dish itself is originated from Southern China, created by immigrants from Hainan.
This is how the dish get it's name.

If you googled on chicken rice recipe, you'll find a number of recipes offering different variations of the way to prepare chicken rice.
Some of the recipes use the empat sekawan (cardamom, cinnamon, cloves and star anises) to cook the rice, while some other recipes called for usage of lemongrass and pandan leaves for fragrant aroma of the rice.

So, what makes Hainanese chicken rice stands out from the rest of chicken rice recipes?
First of all, we need to know the component of the chicken rice itself. 
So, basically, chicken rice is a set of rice that consists of:
  • Rice cooked with chicken broth, ginger and garlic
  • Chicken (steamed, fried or roasted)
  • Spicy chili sauce
  • Soy sauce
  • Soup
  • Ginger garlic sauce (sometimes)
The most prominent aspect that makes the Hainanese chicken rice distinct is that the way of cooking the chicken.
The chicken is usually fried or roasted  in the Malay version of chicken rice.
Whereas the chicken for the Hainanese chicken rice is boiled to tender, then immediately transfer the chicken into a bath of ice water to quickly cools it down and prevent further cooking process from the remaining heat that left in the chicken flesh.
Bathing the chicken in ice water will also  makes the chicken skin firm in texture.
After dunked into the ice water, the chicken is then rubbed with sesame oil to ensure the skin and the flesh remain moist and not drying out before it is served.



Usually when I make chicken rice, I like to prepare what I called as ginger paste or pes halia.
This paste is consists of ginger and garlic, blended until smooth and fried until the oil starts separating.
Since chicken rice is a Chinese dish, ginger and garlic is a must ingredients.
The ginger paste is added to all of the components of the chicken rice.
The leftover of the paste when seasoned with salt and a few drops of vinegar can be served together with the chicken rice.

I made this for our yesterday's iftar, together with refreshingly sago mango dessert.
Other than the common chopped green onion for the garnish, I also love the flavor of fried shallot on top of my chicken rice and its soup, homemade one, of course!
It is tastier, crispier and unpreserved.

Alright! Let's dive in to the recipe.





 NASI AYAM HAINAN | HAINANESE CHICKEN RICE

Cuisine : Chinese
Serve : 5 to 6


INGREDIENTS 

For Ginger Paste:

8 inches of ginger
4 cloves of garlic
Water for blending
100 ml of 1/4 cup of cooking oil

For Chicken & The Broth:

1/2 chicken - you may cut into 4 to 6 pieces
Water as needed for pre-boiling the chicken
3500 ml of water (or more if you like to drink the soup)
2 chicken stock cubes | 3 tablespoons of chicken stock powder - optional
Salt to taste
5 stalks of green onion - take the white part
1 to 2 ladles of ginger paste
Sesame oil for rubbing the chicken
Ice water

For Spicy Chili Sauce:

6 red chilies - cut into 1 inch long
2 tablespoons of ginger paste
 Lime juice from 1 lime - optional
1 to 2 tablespoons of white vinegar
Salt to taste
Sugar to taste
Broth as needed

For Soy Sauce:

5 tablespoons of light soy sauce
1 to 2 tablespoons of sweet soy sauce
1 tablespoon of oyster sauce
1 tablespoon of sesame oil
1 tablespoon of ginger paste
1 to 2 teaspoons of sugar
1 to 2 cups of broth

For Chicken Rice:

2 cups of rice
4 cups of broth (for fragrant rice, use the ratio of 1: 1 for rice and broth)
Salt to taste
2 pandan leaves - knotted
2  to 3 tablespoons of ginger paste
1 tablespoon of chicken stock powder - optional

For Soup:

The remaining broth
1 soup spices (sup bunjut) - optional
Salt to taste
1 teaspoon of white pepper powder

For Ginger Sauce:

The remaining ginger paste
Salt to taste
A few drops of white vinegar

For Fried Shallots (bonus recipe 😉):

6 shallots - thinly sliced
1 1/2 tablespoons of corn flour
1/2 teaspoon of sugar
1/4 teaspoon of salt
Oil for frying




INSTRUCTIONS


Prepare Ginger Paste:

Blend ginger and garlic until smooth.
Heat oil in a pan, once hot, pour in the blended mixture and cook until the oil starts to separate (pecah minyak).
Transfer into a heat proof container and set aside.



Cook The Chicken & Prepare The Broth:

Boil about 2 liters of water in a pot.  Once water is boiling hard, add in chicken pieces and pre-boil over high heat for 1 minute.  This is to melt the chicken fat.  Transfer the pre-boiled chicken pieces into a bowl and discard the water, including the scum.
Refill pot with clean water, about 3500 ml and add ginger paste.  Bring the water to boil, then add in chicken pieces, green onion, chicken stock cubes and season with salt.  Lower the heat and let it simmer for about 10 to 15 minutes.  
Check for doneness by poking a fork into the flesh under the leg, if the juice that run out is clear, that means the chicken is already cooked all the way through.  Turn off the heat and immediately transfer the cooked chicken into a bowl containing ice water for quick cooling process.  Soaked the chicken pieces in ice water for about 5 minutes.  Then, transfer onto a plate.  Rub or brush the chicken with sesame oil to prevent the skin and flesh from drying out.  Sesame oil also adds flavor to the chicken.



Prepare The Spicy Chili Sauce:

In a blender, add coarsely cut red chilies, ginger paste, lime juice, vinegar, salt, sugar and chicken broth.  Blend until smooth and transfer into a pot.  Bring the sauce to boil, then lower the heat and simmer for another few minutes until the sauce reach your desired consistency.  You may add more salt, sugar or vinegar at this point if needed.



Prepare The Soy Sauce:

Combine light soy sauce, sweet soy sauce, oyster sauce, sesame oil, ginger paste, sugar and chicken broth in a bowl. Stir until well-combined.




Cook The Chicken Rice:

Place cleaned rice into a rice cooker.  Add knotted pandan leaves, salt to taste and chicken stock powder (if using).  Pour chicken broth over and stir to combine.
Cook the rice as usual.
Once the rice is set, turn off the rice cooker and do not open the lid for 10 minutes. 
Then, fluff the rice with a fork.

Make The Soup:

Heat the remaining chicken broth, add soup spices and season with salt and white pepper powder.  Let the soup simmer for 20 minutes.

Prepare The Ginger Sauce:

Heat the remaining ginger paste in a pan over low heat.  Season with salt and a few drops of vinegar.  Stir continuously for 1 or 2 minutes then remove from the heat.

Prepare The Fried Shallots:

Coat sliced onion with corn flour and season with sugar and salt.
Fry over medium heat until golden.
Place the fried shallots into a colander to drain excess oil.
Let it cools completely before storing in an air-tight container.




TO ASSEMBLE THE HAINANESE CHICKEN RICE

Scoop a bowl of chicken rice in the middle of a plate, lay two salad leaves at one side and place chopped chicken on top of it.  Garnish with chopped green onion and fried shallots.  Arrange a few slices of cucumber and tomato at another side.  Scoop a few tablespoons of spicy chili sauce into a sauce bowl, a ladle or two of the soup into a ramekin cup or a soup bowl and place a teaspoon of ginger sauce in a sauce bowl.  Serve along with the rice.
