Resepi Nasi Minyak Simple Tanpa Minyak Sapi & Susu Cair






If you're craving for nasi minyak yet you don't have ghee and evaporated milk available in your kitchen, this is the recipe that you're looking for!

Made with simple ingredients which are available in most of our kitchen, we can make yummy nasi minyak in less than 1 hour!

What's more, this nasi minyak is made with normal rice, so everyone can make nasi minyak even without using Basmathi rice!


You might be curious, is this nasi minyak is going to be delicious?

With no ghee and evaporated milk, the must-have ingredients for making nasi minyak?

Absolutely!  

In fact, my whole family prefer this version of nasi minyak since the taste is light with the fragrant aroma of the spices and margarine added into it.

Oh! Don't forget the pandan leaves!

We need those rosy, sweet aroma of the leaves to make more flavorful nasi minyak.

You may want to add some chicken stock powder or use chicken broth, instead of plain water to cook the nasi minyak.





Actually, it has been a while since I cooked nasi minyak.

The last time I was cooking nasi tomato, which is a different variation of nasi minyak was during early of Ramadhan this year, for our Iftar.

But it looks like Mr Hubby prefer this version of nasi minyak compared to nasi tomato, and he finished the nasi minyak up to the last grain of rice!


We're not picky when it comes to the side dish for our nasi minyak.

You can choose to enjoy your nasi minyak with curry, dhal, kuzi, korma or roasted meat or kebab, but we like to eat nasi minyak with ayam masak merah the most!

If you have extra time, you can also prepare another side dish for nasi minyak, which is called as acar.

Acar is a vegetable pickle which has sweet, spicy and sour taste all together.

We have a few versions of acar like acar rampai (this is my favorite!), fruit acar and simple acar made with pineapples, cucumber, red chilies, sugar, salt and vinegar.

Acar especially the simple acar has to be freshly made before it is served.

So, if you plan to make simple acar to be eaten with nasi minyak, mix the veggies with the vinegar, sugar and salt in a small portion at a time, just enough to be eaten at that time because the acar will no longer be fresh and it'll becomes watery as the juices from the pineapple and cucumber squeeze out after the acar is left for a few hours.


I didn't prepare acar for our nasi minyak since I ran out of pineapple and cucumber stock at home.

So we just enjoyed our nasi minyak with ayam masak merah and salads.


Even now, I'm still drooling to eat nasi minyak again as I'm writing this post at 3.30 AM while accompanying My Hubby which is on a night shift duty.

If you have raisins or cashew nuts at your home, you can add into your nasi minyak to add more flavors and textures to it.

I seldom stock cashew nuts, so don't expect to find the trace of the nuts in my nasi minyak recipe, unless, when I properly plan to cook nasi minyak, then I will definitely buy cashew nuts to be added into it.

Nasi Minyak Simple Tanpa Minyak Sapi & Susu Cair

Serving Size: 6 to 7 people

Preparation Time: 10 minutes

Cooking Time: 40 minutes




INGREDIENTS






3 cups of rice - wash cleanly

4  & 1/2 cups of water (adjust accordingly to your type of rice)

2 pandan leaves - knotted

1 cube of chicken stock powder (optional)

2 star anises

1 small cinnamon stick

4 cloves

4 cardamoms

1/4 cup of raisins

1 tablespoon of margarine

2 tablespoons of corn oil (can use cooking oil to substitute)

Yellow food coloring 

Salt to taste

1 or 1 & 1/2 onion*

2 shallots*

3 cloves of garlic*

1 cm of ginger*

Water as needed for blending spices




Side Dish:


Ayam masak merah

Salad

Sliced cucumber

Sliced tomato

Acar

Fried shallots

Chopped green onion

Chopped Chinese celery




INSTRUCTIONS:




Blend ingredients written in bold and marked with * water as needed until smooth.




Heat 1 tablespoon of margarine with 2 tablespoons of corn/cooking oil in a wok. Once hot, add in cloves, cardamoms, cinnamon stick and star anises for a few seconds until fragrant.




















Add in blended spices and fry until oil separates (pecah minyak).  Then, add in chicken stock powder (if using) and mix until it dissolved.  Turn off the heat.




















Add cleanly washed rice into a rice cooker, water, pandan leaves, raisins, salt and the cooked spices.  Mix well with a spatula or a wooden spoon and cook rice as usual according to your rice cooker instructions.


Once the rice is cooked, turn off the rice cooker and let it sit (with lid closed) for 3 minutes.













After three minutes, open the lid and make small holes with a bamboo skewer or a chopstick down to the bottom of the rice cooker.





















Drop a small amount of yellow food coloring into the prepared holes.  Then, mix the rice gently with a fork while fluffing the rice at the same time.


Nasi minyak is now ready to be served!








How To Serve Nasi Minyak:



Put about a small bowl of nasi minyak on a plate.  Add a piece of ayam masak merah and spoon some of masak merah gravy on all over the chicken piece.  Spoon one or two tablespoons of acar or arrange a few leaves of salad, a few slices of cucumber and/or a few slices of tomato at the side of the plate.  


Lastly, sprinkle with fried shallots and chopped Chinese celery and green onion.
