Tumis Sawi Jepun (Pak Choy) Sos Tiram Bersama Tauhu Telur Menu Sahur Ringkas





Ramadhan is fast approaching.

Have you prepared your menu planner for your pre-dawn meal (sahur) and Iftar meal?

As for me, I'm not the type to decide at the last minute on what I want to cook for our pre-dawn and Iftar meals even though I might change the menu afterwards.

Moreover, I have to shoot videos on making those meals, to be posted in my cooking channel, which means, I have to organize my work and the arrangement for video shooting since I have to do the shooting alone without an assistant.


Some people prefer to eat light menu such as overnight oats and egg bread but we usually have rice with simple dish for our pre-dawn meal.

If let say I cooked heavy menu for our today's Iftar, like tomato rice or chicken rice, we'll eat the same dish for our next day's pre-dawn meal.

If otherwise, I'll wake up earlier to prepare one or two simple dishes to be eaten with rice.






We prefer simple, vegetable-based dishes for our pre-dawn meal.

In this post, I'm going to share with you one of our favorite pre-dawn meal dish - stir fry bok choy in oyster sauce with egg tofu.

A pre-dawn meal must meet my criteria when making meals for my family.

So, it should be nutritious and satiating in order to provide sufficient energy for our body during fasting.

So, normally I 'll prepare a dish which contains all the basic nutrients needed - protein ,vitamins, starch and fiber.

Tofu, egg tofu, egg and soybean cake are among my favorite protein-based ingredients to be added in the dish.


I like my dish to be colorful, so this dish, besides it's simplicity, it is flavorful and has variety of colors and textures from the Bok choy itself, red chilies, fried egg tofu and small white shrimps.

This is a Chinese-style dish, so it is important to add oyster sauce into the dish.

It's sweetness, saltiness with a hint of barbecue flavor of the oyster sauce, when combined with overall flavors in the dish, makes this dish very tempting.

It is best to be enjoyed immediately after cooked, as it 'll not be as good after it is left for a few hours as the gravy will gets thicker when the corn flour, which coating the egg tofu is dissolved in the gravy after soaked for a long hours.

TUMIS SAWI JEPUN SOS TIRAM BERSAMA TAUHU TELUR
(Stir Fry Bok Choy In Oyster Sauce With Egg Tofu)

Preparation Time : 10 minutes

Cooking Time : 10 minutes

Serving Size : 4 to 5 people





Ingredients :






6 to 7 Bok Choy - cut in half or four if the size is bigger

20 small white shrimps  - head and tail removed

2 tablespoons of oyster sauce

1 & 1/4 cups of water

1 red chili - sliced

1 red bird's eye chili - sliced

1 teaspoon of anchovies stock powder / 1/4 anchovies stock cube

Salt to taste

1 shallot - thinly sliced

2 cloves of garlic - thinly sliced

1 cm of ginger - minced

About 1/3 cup of cooking oil for frying egg tofu

About 2 tablespoons of oil from frying egg tofu





2 tubes of egg tofu - sliced into 1 to 2 cm thick

About 2 tablespoons of corn flour for coating sliced egg tofu






Instructions :









Heat 1/3 cup of cooking oil in a pan over medium heat.  When the oil is hot, coat each piece of egg tofu with corn flour and fry over medium heat until light brown on each sides.  




Gently flip the egg tofu pieces as they are delicate and easily break.  Fry for about 2 minutes on each side.




Remove from the pan and place in a strainer or colander to drain excess oil.  Set aside for later use.




Leave about 2 tablespoons of the oil in the pan.  Add in sliced shallot, garlic and minced ginger.  Stir fry over medium high heat for about 30 seconds, until fragrant.




Add in sliced chilies and stir fry for a while.




Add in water, anchovies stock powder or cube and oyster sauce.  Stir and bring the gravy to boil.





Add in small white shrimps and Bok choy, stir for a while.




 Cover and cook over high heat for 2 to 3 minutes minutes, until the leaf part are withered.




Open the lid and lower the heat, add in fried egg tofu, stir and season with salt.  Stir for a few seconds then turn off the heat.





Stir fried Bok choy is ready to be served with warm rice.
