Cornflakes Chocolate Chips Cookies





Cookies are everyone's favorite.
Chocolate chips cookies especially when added with almond nibs or walnut is absolutely going to be my first cookie of choice to grab.
Chocolate chips cookies is not only popular during festive seasons, but also a snack in demand on usual occasion especially among kids and chocolate lovers!

Today I made another variation of chocolate chips cookies.
I enrich the flavors of my chocolate chips cookies with nestum and cornflakes.
On top of that, instead of using only chocolate chips, I added butterscotch chips inside.
The truth is, these cookies is supposed to be made for Hari Raya Haji or Eid Al-Adha.
But since my hubby bought a lot of multi-flavored of MyBizcuit's cookies at that time, I have to postpone my baking plan.

I know a lot of diet tips restraint us from consuming baking products like cookies.
Cookies, particularly the store-bought one is high in sugar and some of those contain high fructose corn syrup (HFCS).
HFCS is made of corn starch and is very sweet.
In fact, experts agreed that HFSC are more dangerous than other sugars.
Consumption of baking goods with abundant sugar content will definitely ruin your diet and dreadfully affect your health.

For me, I'll just consume in moderation instead of cutting them out entirely.
Cookies or any other baked goods, when is self-prepared, we can control the ingredients usage.
More importantly, go wholegrain and try to add in healthy fiber and nuts.
Cutting carbs entirely will cause you to miss certain nutrients found in them.
I have to add in butter in my cornflakes chocolate chips cookies to clear my butter stock.
When I make cookies, I like to try making another version from the one that I used to make before because by trial- and- error, only then we are able to bring our baking creativity to the next level.
I love to bake and cook, but I've never join any cooking or baking class before.
I gather the skills by learning from experiences and mistakes along with constant practice to deliver the best version of my homemade cookies.

Because these cookies are so rich in flavors; with the scent of butter with chocolate chips and corn-flavored aroma from nestum and cornflakes especially when they are baked, the temptation that can triggers anyone's desire to indulge.
I made my cookies less sweet, using brown sugar.
Plus, the 3 in 1 nestum is already sugar-contained so you don't have to add a lot more sugar into your cookie dough.

I always prefer my cookies to be slightly over baked as it'll be crunchier and more aromatic.
If you want to make them chewy, you have to bake with a lower temperature (160 to 170 ℃) and shorten the baking duration.
The most important thing is, make your own cookies according to your own preference.

Next time if you decide to throw a party you can make these cookies for your guests.
These cookies can last up to 2 months when perfectly sealed.
If you want to make them more mouthwatering, dip one half of each cookie in a melted chocolate.
And don't be surprised if they are gone within 5 minutes upon serving because even mommy's and daddy's kids are going to love these cookies! 😆😆

Some cookies taste better on the next day after you baked them.
I couldn't agree more on that!
In fact, these yummy cookies taste much better if you keep them refrigerated.
Yes, it's true.
The cookies get crunchier and more firm when you eat them cold.
Try it and I'm sure you'll agree with me.

All I can say is...these cookies are definitely a better version of the original chocolate chips cookies.
You know how delicious the flavor of nestum is even when you just make a plain nestum cookies.
With additional chocolate chips and cornflakes, these cookies are heavenly yum-yum!


CORNFLAKES CHOCOLATE CHIPS COOKIES

Course : Snack
Yield : 80 -100 pieces


Ingredients:

1 cup of butter/margarine
1/2 cup of coconut/corn oil
a pinch of salt
1/8 cup of brown sugar
1 medium sized egg
1 teaspoon of vanilla essence
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
2 cups of cornflakes - coarsely crushed
1 1/2 cups of chocolate chips (I mix chocolate & butterscotch chips)
1/4 cup of almond nibs (roasted)
2 packets of instant (3 in 1) Nestum
1/4 cup of corn flour
1 3/4 cups of all purpose flour








Instructions:
  1. Preheat oven to 180℃.  Grease baking pan with butter or line a sheet of baking/parchment paper.
  2. Cream butter, oil, sugar and salt until creamy and fluffy.
  3. Crack in egg and add in vanilla essence while continue mixing.
  4. Add in baking powder, baking soda, crushed cornflakes, roasted almond nibs, chocolate chips and Nestum.  Mix well using a spatula.
  5. Lastly, add in corn flour and slowly add in all purpose flour.  Fold to combine all the ingredients.
  6. Using two teaspoons, scoop a spoonful of the dough using 1 spoon then drop it onto the prepared baking pan.  Use another spoon to push the dough.  Spare cookies about 2 inches apart to prevent them from sticking together during baking.
  7. Bake for 15 to 25 minutes in a middle oven rack.
  8. Cool for 2 minutes before transferring the baked cookies onto a wire rack to cool completely.
  9. Store the cookies in an air tight container or cookie jar.
