Egg Based Breakfast Idea 2 : Healthy Vege Egg Pizza with Sweet Potato Wrap





I've always been eager to explore on deliciously creative egg based recipes shared online. Egg is considered the cheapest and affordable protein source packed with high nutritional values. I'd rather not to spend my money to buy expensive meat while I am able to get my protein from the cheaper source. Eheh..

So, what I am going to share with you is a quick and healthy egg based recipe which I inspired from a famous Malaysian Chinese fitness instructor , Joanna Soh.

The first time I came across her page when I was looking for motivation on my weight loss journey and shifting towards a healthier lifestyle. I found most of her video posted in Youtube are intriguing.

For the sweet potato wrap, I've prepared earlier and have them stored in fridge. You can look at the wrap recipe I posted previously ( here ).  The simplest way to kick start a healthier lifestyle is by changing your eating habit and to prepare your own dishes.

This recipe yields 4 personal sized of vege egg pizza.


Lets look at the ingredients:

2 eggs
pinch of salt
1/2 teaspoon of black pepper powder
1/2 Holland onion (thinly sliced)
broccoli (cut into small pieces)
capsicum (cut into small pieces)
carrot (thinly sliced & cut into small pieces)
olive oil
mozzarella cheese for topping
sweet potato wrap


The preparation is as simple as ABC!

  1. Beat the eggs with a pinch of salt and black pepper. Set aside.
  2. Heat the olive oil in a non-stick pan, saute the onion over medium heat and add in broccoli, capsicum and carrot. Stir fry for a while. Do not overcooked your vege okay.
  3. Pour the beaten eggs over the vegetables and stir lightly so create crumble.
So, the topping is all set! 


Next ,preheat oven at 180'C for 10 minutes. Meanwhile, place the sweet potato wrap on the baking tray, spread with the vege-egg crumble for the topping and sprinkle with mozzarella cheese.



Bake in the oven for about 5-10 minutes.

This healthy dishes is considered a satiating food, while helps you to starve off longer due to high protein content from the eggs and complex carbs from the sweet potato.
